Roasted Cauliflower Crunchies

This is another delectable recipe from my annual 21-Day Winter Total Body Reset program, which serves two and tastes great. The added bonus is that it's aimed at reducing inflammation, shedding unwanted weight and boosting your energy.


Roasted Cauliflower Crunchies

HERE'S WHAT YOU NEED:

[Serves 2]

  • 1 head of cauliflower chopped into bite-sized pieces

  • 1⁄2 teaspoon cumin

  • 1⁄2 teaspoon garlic powder

  • 1 tablespoon extra virgin olive oil

  • 1⁄4 cup pumpkin seeds


WHAT YOU NEED TO DO:

Preheat oven to 400 F. Toss all the ingredients together on a baking sheet. Roast for 25 – 30 minutes until browned and crispy.
